Indiana Farmland’s traditions don’t die easy. And it’s great that they don’t because the world needs more family traditions that bring people together.

It all started over 100 years ago. Almost every year the Walker Family would gather in their farm woods. Now, it’s every year. A fifth generation is involved.

Freeze was still standing in the land, but one of the boys or their father, Earl Walker, would be driving to the woods to check if maple sap had been collected in the buckets from the previous day. Later the maple sap used to be collected into big plastic barrels. Now, it’s a different story. 

Brian Walker, the youngest in the family, took their family’s tradition to a whole new level. Yes, the equipment has changed and the amount of maple sap gathered, also quadrupled.  But some principles remained the same. A lot of manual labor through the years and still being used to ensure people will get the same delicious sweetness. Many people who have tasted Indiana Maple Syrup, say that it’s the best maple syrup they’ve tasted.

One might ask why do they say this?

Well, for one thing, the woods, the Walkers own, have plenty of sugar, silver, and red maple trees. This creates a rich taste and flavorful aroma of yummy maple syrup.

Secondly, the winter in Indiana is pretty severe for at least one month in the year. Trees need that for a better running sap.

But that is not what makes syrup so good. Brian W. never dilutes or mixes their syrup with anything. Not what consumers get in normal grocery stores. He usually gets four grades of maple syrup: Grade A Amber Delicate (other names golden, delicious), Grade A Rich Taste (slightly darker), Grade A  Robust (dark color with red tones),  and Grade A Very Dark Robust. Last one used to be called Grade B.

He sells them by grade. No need to mix them, as each grade has its fans and some grades are better in drinks and some are in marinades. 

Once born and grown up in Indiana certain things will never go out of style. It is good homemade food, family gatherings and spending time in the Nature. Brian is trying to keep this tradition as well although some kids in the family are far away or gone. Homeland Indiana provides a lot of trees, never sprayed, clean woods, wildlife and of course hardworking farmers that can’t be taken away from the culture. 

The Tibetan monks say “When you make food make it with love, or don’t at all”. The Walkers love to make maple syrup. It was one of their most favorite entertainments in the early spring. It was made with love. Still made with love to this activity, togetherness, and to the taste of Indiana Maple syrup.

Brian aims for the best of the best. He also tripled the filtration of the maple syrup because this makes it look good in glass bottles, and “less settlement” as he says.
